3 Dinners from the PHI group 

In the last of the series (for now) here a 3 dinners that the PHI group tried/loved/shared. I am including roasted broccoli even though its not actually a dinner because it caused a bit of a stir! You will either be surprised at how much you love it, or you will hate it – where have i heard that before?….

Roasted Broccoli

(3 Servings)

  • 4 cups broccoli (cut into florets)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt

Directions: Preheat oven to 200 degrees. On a rimmed baking sheet, toss the broccoli with olive oil and spread out on the sheet. Season lightly with salt. Roast for 20-25 minutes.

 

Turkey Burgers (Makes 7-8 burgers)

  • 5lbs (700g) ground turkey meat
  • 1 tbsp coconut oil
  • 1 sweet onion, diced
  • 1/2 red pepper, diced
  • 1 tsp ground cumin
  • 1/8 tsp cayenne pepper or red pepper flakes (optional)
  • 1/2 tsp garlic powder
  • 1/2 cup flat leaf parsley, finely chopped
  • sea salt & pepper to taste

 

Over medium heat, sauté onion in coconut oil until translucent. Add red pepper, cumin, garlic powder, parsley, cayenne pepper, and salt and pepper. Sauté for 5 minutes more, and remove from heat. Once cool, add ground turkey to the mix, and form into 7-8 burgers (approx. 90g).

Heat up large pan under medium heat and add burgers. (1 tsp. coconut oil optional for cooking burgers) Flip after 4-6 minutes and cook through on the other side until done.

***Burgers freeze very well

1 serving = 1 burger!

 

Baked Pecan Chicken

(4 Servings)

  • 500g boneless, skinless chicken breasts
  • 2 large eggs
  • 2 tbsp chopped parsley
  • 1 ½ tsp salt, or to taste
  • 1 ¼ cups finely chopped pecans, toasted

 

Preheat oven to 200 degrees. Beat eggs until foamy. In a bowl, combine the pecans, parsley and salt. Dip the chicken in the egg, then dredge in pecan mixture. Arrange chicken breasts on a lightly greased aluminium foil-lined baking sheet for 20 to 25 minutes or until chicken is cooked through.
